Series Introduction: The raw materials of Zhengjue·Silver Needle (Baihao Yinzhen) are produced in Jianyang, Shuiji, Songzheng in northern Fujian and Fuding in eastern Fujian. This tea is loved by tea enthusiasts for its unique flavor and high quality. Baihao Yinzhen is covered with white downy hairs, white as silver and slender as needles, hence the name. When brewed, "the cup is filled with floating tea cream"—the silver needles stand upright, crisscrossing up and down, resembling flowers, which is why it is called Baihao Yinzhen (Silver Needle with White Down).
Tea Characteristics: Baihao Yinzhen has plump, fat buds with obvious downy hairs, showing a silvery gray color that shines brightly. The tea soup is apricot yellow, with a mellow taste and a sweet aftertaste. After brewing, the tea buds fall slowly, sinking to the bottom of the cup, standing upright one by one.
Brewing Method: When brewing Baihao Yinzhen, since the tea leaves are very tender, the water temperature should not be too high, generally controlled at around 90°C. Baihao Yinzhen is fully covered with downy hairs, and the tea juice comes out slowly, so the brewing time can be appropriately extended, usually about 30 seconds. Taking gaiwan brewing as an example: the tea amount is about 8g, the water temperature is around 90°C. For the first infusion, the tea can be poured out after 30 seconds; for subsequent infusions, the brewing time can be extended by about 5 seconds each time.
